Irish Mist Chicken  

1/4 lb - mushrooms minced
1/2 t - thyme
1 t - minced shallots
1 t - minced garlic
1/2 cup - Irish Mist Liquor
1 cup - demi glace or 1 cup beef stock thickened
1/2 cup - heavy cream
1/4 cup - diced carrots
1/4 cup - white wine

 

For Sauce:
In sauce pan sauté garlic, shallots and mushrooms until garlic and shallots are translucent. Add Irish Mist to deglaze pan (if you are using a gas stove be careful of flames as the alcohol can catch fire). Add Demi Glace or thickened stock and heavy cream and bring to a simmer. Reduce sauce to appropriate thickness.

 

For Chicken:
Dust 4 6 oz chicken breasts with flour and sauté in pan with olive oil. When chicken is almost done , add 1/4 cup of diced carrots. Deglaze pan with white wine for about one minute. Place chicken on a serving platter, top with sauce. Serves four.

 

 

Strawberry and Bailey's Fool
1/2 cup Bailey's irish cream
4 cups whipped topping
2 pints cleaned strawberries
1/8 cup granulated sugar

 

Clean and slightly puree 1 pint of the strawberries with 1/4 cup of the Bailey's irish cream and sugar. Slice the other pint of strawberries and reserve for the dessert. In a dessert or parfait, place the pureed strawberry mixture on the bottom to go about 1/3 of the glass. Try not to touch the sides so the dessert looks "clean." Next, through a pastry bag, squeeze the whipped topping for about another 1/3 of the glass. On the last 1/3, place the sliced strawberries flat until they are level with the top of the glass. Drizzle with Bailey's and top with more whipped cream. Serve with strawberry or chocolate garnish on top.
